How can I change the Mandatory text to something else?

Hi,

You have to download and install the language pack for CKForms ‘en-GB’. Go and edit the following files and change the second value for the line "MANDATORY":
<root>/language/en-GB/en-GB.com_ckforms.ini and <root>/language/en-GB/en-GB.plg_content_ckforms.ini
