Change mail to in php

How can you change the "MAIL TO - e-mail" in the php files?
I have to change the e-mail, but I can't go to the backend of my joomla site.
So I tought there is a way to change the e-mail by php in the files on te server.
I have already searched in those folders of the ckform-component, but haven't found anything.

I hope someone can help me!
